  • 14 oz soft tofu silken or soondubu-style, spooned into large pieces
  • 1 egg optional, cracked in at the end
  • 1 tsp toasted sesame oil for finishing

Steps

  1. Warm oil in a small heavy pot. Add garlic and green onion whites; stir briefly until fragrant.
  2. Add gochugaru and stir for 15 to 20 seconds so the chili blooms without burning.
  3. Stir in kimchi and mushrooms. Cook 3 to 4 minutes until the kimchi smells savory.
  4. Add broth and soy sauce. Simmer 6 to 8 minutes so the broth takes on the kimchi flavor.
  5. Spoon in soft tofu in large chunks. Simmer gently 3 to 4 minutes, keeping pieces intact.
  6. Taste and adjust with soy sauce or kimchi juice. Add the optional egg and simmer until just set.
  7. Finish with sesame oil and green onion tops. Serve hot with rice and let it cool slightly before eating.
