High Protein Egg Fried Rice
A quick egg fried rice built around leftover rice, extra eggs, vegetables, and soy sauce for a budget-friendly high-protein meal.

Ingredients
- 3 cups cooked rice cold leftover rice works best
- 4 eggs lightly beaten
- 1 cup frozen mixed vegetables peas, carrots, corn
- 3 green onions sliced
- 2 cloves garlic minced
- 2 tbsp soy sauce plus more to taste
- 1 tsp sesame oil for finishing
- 1 tbsp neutral oil for the pan
- 1 cup edamame or tofu optional extra protein
Steps
- Break up cold rice with your hands or a spoon so the grains are loose before cooking.
- Heat oil in a large skillet. Scramble eggs until just set, then move them to a plate.
- Add garlic, vegetables, and optional edamame or tofu. Stir-fry 2 to 3 minutes.
- Add rice and cook 3 to 4 minutes, pressing and tossing so it heats evenly.
- Stir in soy sauce, sesame oil, green onions, and the cooked eggs.
- Taste and adjust soy sauce. Serve hot with chili sauce if you like heat.
