Cook This Meal
Ingredients
- 2 eggs lightly beaten
- 1/4 cup shredded cheese cheddar, mozzarella, or pepper jack
- 2 tbsp bell pepper finely chopped
- 1 tbsp onion finely chopped
- 1/2 cup spinach loosely packed
- 1 tbsp milk or water optional, for softer eggs
- 1 tsp butter or olive oil for the pan
- to taste salt
- to taste black pepper
- optional hot sauce for serving
Steps
- Beat eggs with milk or water, salt, and black pepper until the yolks and whites are fully combined.
- Heat butter or oil in a nonstick skillet over medium heat. Add bell pepper and onion and cook for 1 to 2 minutes.
- Add spinach and stir just until wilted.
- Lower the heat to medium-low and pour in the eggs. Tilt the pan so the eggs spread evenly.
- When the edges begin to set, sprinkle cheese over one half of the omelette.
- Fold the omelette gently, cook for another 30 to 60 seconds, and slide onto a plate while the center is still soft.

Why this recipe works
Small vegetables cook fast
Finely chopped peppers and onions soften quickly without needing a long saute.
Lower heat protects the eggs
Medium-low heat gives the eggs time to set gently so the omelette stays tender.
Cheese helps the fold
Melted cheese binds the filling and makes the omelette feel more complete.
Fix it while cooking
Went wrong, confused, or need help?
Use these quick fixes first. If the issue is still unclear, open Rescue and describe what happened, what step you are on, and what ingredients you already added.
Omelette stuck
Loosen around the edges with a spatula and fold it into a rustic scramble if needed.
Eggs browning too fast
Lower the heat immediately and remove the pan for a few seconds.
Filling is watery
Cook vegetables a little longer next time, or drain wet ingredients before adding eggs.

Quick answers
Veggie Cheese Omelette FAQ
Can I use egg whites?
Yes. Use three egg whites, or one whole egg plus two whites for a lighter omelette.
What pan works best?
A small nonstick skillet is easiest because the eggs release cleanly.
Can I make this ahead?
It is best fresh, but you can chop the vegetables ahead to make cooking faster.
