Ingredients

  • 1 cup brown or green lentils rinsed
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 14 oz can diced tomatoes with juices
  • 5 cups vegetable broth plus more if needed
  • 1 tsp cumin ground
  • 2 cups spinach or kale chopped
  • 1 tbsp lemon juice for finishing

Steps

  1. Warm oil in a soup pot. Cook onion, carrots, and celery for 5 minutes until starting to soften.
  2. Add garlic and cumin. Stir for 30 seconds so the spices smell warm.
  3. Add lentils, tomatoes, and broth. Bring to a boil, then reduce to a steady simmer.
  4. Cook 25 to 30 minutes, until lentils are tender but not falling apart.
  5. Stir in spinach or kale and cook 2 minutes until wilted.
  6. Finish with lemon juice. Add salt, pepper, or extra broth to adjust flavor and thickness.
