  • 3 cloves Garlic minced
  • 1 tsp Thyme fresh or dried
  • 1 1/2 lb Baby potatoes halved
  • 4 Carrots cut into chunks
  • Salt to taste
  • Black pepper to taste
  • Parsley optional for serving

Steps

  1. Heat oven to 425 degrees F.
  2. Whisk maple syrup, Dijon mustard, whole grain mustard if using, olive oil, vinegar, garlic, thyme, salt, and black pepper.
  3. Place potatoes and carrots on a sheet pan or shallow baking dish. Toss with a spoonful of the maple mustard sauce.
  4. Pat chicken dry, season lightly, and place it among the vegetables.
  5. Brush chicken generously with the remaining maple mustard sauce.
  6. Roast for 35 to 40 minutes, turning vegetables once, until chicken is cooked through and the potatoes are tender.
  7. If the chicken needs more color, broil for 1 to 2 minutes while watching closely.
  8. Rest for 5 minutes, spoon pan juices over the chicken, and finish with parsley if using.
