Ingredients

  • 12 Lasagna noodles regular or oven-ready
  • 1 lb Ground beef or Italian sausage
  • 3 cups Marinara sauce plus extra if needed
  • 15 oz Ricotta cheese
  • 2 cups Mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 Egg for ricotta layer
  • 3 cloves Garlic minced
  • 1 Onion finely chopped
  • 1 tbsp Olive oil
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh basil optional for serving

Steps

  1. Heat oven to 375 degrees F. If using regular noodles, boil them until just flexible, then drain.
  2. Warm olive oil in a skillet. Cook onion until softened, then add garlic for 30 seconds.
  3. Add ground beef and cook until browned. Drain extra fat if needed.
  4. Stir in marinara sauce and Italian seasoning. Simmer for 8 to 10 minutes so the sauce thickens slightly.
  5. Mix ricotta, egg, parmesan, a pinch of salt, and black pepper in a bowl.
  6. Spread a thin layer of meat sauce in a baking dish. Add noodles, ricotta mixture, mozzarella, and more sauce.
  7. Repeat layers until ingredients are used, finishing with sauce and mozzarella on top.
  8. Cover with foil and bake for 25 minutes. Uncover and bake 15 to 20 minutes more until bubbling and browned.
  9. Rest for 15 minutes before slicing so the layers hold together.

Why this recipe works

Resting keeps clean slices

Lasagna needs time after baking so the cheese, sauce, and pasta settle. Cutting too soon makes the layers slide apart.

A thicker sauce protects texture

Simmering the sauce before layering keeps the finished pan from becoming watery.

Covered first, uncovered later

Foil helps the center heat through, then the final uncovered bake browns the cheese.

Fix it while cooking

Too watery

Let it rest longer before slicing. If needed, serve with a slotted spatula for the first piece.

Top browns too fast

Cover loosely with foil and keep baking until the center is hot.

Noodles feel firm

Spoon a little warm sauce around the edges, cover, and bake 10 more minutes.

Quick answers

Lasagna FAQ

Can I make lasagna ahead?

Yes. Assemble it up to a day ahead, refrigerate, then bake with a little extra time.

Can I freeze lasagna?

Yes. Freeze baked or unbaked lasagna tightly wrapped. Thaw overnight before reheating or baking.

Why does lasagna fall apart?

It usually needs more resting time, a thicker sauce, or slightly less filling between layers.
