Steps

  1. Pat 1 1/2 lb fish pieces dry and season lightly with salt, 1/2 tsp turmeric, and 1 tsp chili powder.
  2. Heat 2 tbsp oil in a wide pan. Add 1 tsp mustard seeds and a handful of curry leaves, then let them sizzle for a few seconds.
  3. Add 1 sliced onion and cook until softened and lightly golden around the edges.
  4. Stir in 1 tbsp ginger garlic paste and cook for about 30 seconds, just until fragrant.
  5. Add 2 chopped tomatoes, 1 tsp coriander powder, and another pinch of turmeric. Cook until the tomatoes soften into a thick masala.
  6. Pour in 1 cup coconut milk and 1/2 cup water. Simmer gently for 5 minutes so the sauce comes together.
  7. Add the fish pieces in a single layer. Cover and simmer gently for 8 to 10 minutes, turning only once if needed, until the fish is cooked through and flakes easily.
  8. Finish with tamarind or lemon juice, adjust salt, and scatter cilantro on top. Rest 5 minutes before serving.
