Ingredients

  • 2 lb Chicken bone-in or boneless pieces
  • 2 Onions thinly sliced
  • 2 tbsp Ginger garlic paste
  • 2 Green chilies slit, adjust to taste
  • 2 sprigs Curry leaves
  • 1 Tomato chopped, optional for softer masala
  • 2 tbsp Oil
  • 1 tsp Turmeric
  • 1 1/2 tsp Chili powder adjust to taste
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • 1 tsp Black pepper freshly ground if possible
  • 1 tbsp Lemon juice for finishing
  • Salt to taste
  • Cilantro optional for serving

Steps

  1. Pat chicken dry and season with salt, turmeric, chili powder, coriander powder, and ginger garlic paste.
  2. Heat oil in a wide skillet or kadai over medium-high heat.
  3. Add onions, green chilies, and curry leaves. Cook until onions soften and start to brown.
  4. Add chicken and sear until the outside loses its raw color and begins to brown.
  5. Add tomato if using, then cook until it breaks down into the masala.
  6. Cover and cook on medium heat until chicken is cooked through, stirring occasionally.
  7. Uncover and cook on medium-high heat until moisture reduces and the masala clings to the chicken.
  8. Add garam masala and black pepper. Toss for 1 to 2 minutes until fragrant.
  9. Finish with lemon juice and cilantro if using, then rest for a few minutes before serving.
