Ingredients

  • 2 large tortillas flour or whole wheat; check allergens
  • 1 1/2 cups cooked chicken shredded or chopped
  • 1 cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 1/2 cup bell pepper thinly sliced
  • 2 green onion sliced
  • 1 tsp taco seasoning optional; check salt and allergens
  • 1 tsp olive oil or butter for the skillet
  • 1/3 cup salsa for serving
  • optional Greek yogurt or sour cream for serving
  • 1 lime cut into wedges

Steps

  1. Mix cooked chicken with taco seasoning if using.
  2. Place one tortilla on a board and sprinkle cheese over half of it.
  3. Add chicken, bell pepper, green onion, and a little more cheese over the filling.
  4. Fold the tortilla closed.
  5. Heat a skillet over medium heat with a small amount of oil or butter.
  6. Cook the quesadilla for 2 to 3 minutes per side until golden and the cheese melts.
  7. Rest for 1 minute, then cut into wedges.
  8. Serve with salsa, lime, and Greek yogurt or sour cream if using.
