Steps

  1. Mash the banana in a bowl until mostly smooth.
  2. Stir in eggs, oats, milk, baking powder, cinnamon, vanilla, and a pinch of salt.
  3. Let the batter sit for 2 minutes so the oats soften slightly.
  4. Heat a lightly greased nonstick skillet over medium heat.
  5. Spoon small pancakes into the pan and cook for 2 to 3 minutes until the edges look set.
  6. Flip gently and cook 1 to 2 minutes more until golden and cooked through.
  7. Serve warm with banana slices, berries, yogurt, or a small drizzle of syrup.
