Ingredients

  • 3 cups cold prepared macaroni and cheese firm and refrigerated
  • 1/2 cup cheddar cheese finely shredded
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • as needed olive-oil spray
  • 1/2 cup tomato sauce warmed for dipping

Steps

  1. Use macaroni and cheese that has been refrigerated promptly and is cold and firm. Mix in shredded cheddar, then scoop and compress into 12 tight balls.
  2. Freeze the shaped bites for 20 to 30 minutes so they hold together; do not leave them at room temperature for extended periods.
  3. Set out flour, beaten eggs, and panko mixed with paprika and pepper. Coat each bite in flour, egg, then panko, pressing firmly.
  4. Preheat the air fryer to 390 degrees F (199 degrees C) if recommended. Arrange bites in one layer and mist lightly with oil.
  5. Air fry for 8 to 11 minutes, turning once, until deeply crisp and hot through. If cheese begins leaking, remove that bite promptly.
  6. Rest 3 minutes before eating; the centers retain heat. Serve with warm tomato sauce and refrigerate leftovers within 2 hours.
