Ingredients

  • 1 1/2 lb Yukon Gold or russet potatoes cut into 3/4-inch cubes
  • 1 1/2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • 3/4 tsp garlic powder
  • 3/4 tsp fine salt divided
  • 1/4 tsp black pepper
  • 1/2 cup plain yogurt
  • 1 tsp lemon juice
  • 2 tbsp fresh parsley chopped

Steps

  1. Preheat the air fryer to 400 degrees F (204 degrees C) if recommended. Cut potatoes into even 3/4-inch cubes.
  2. Rinse the cubes under cold water to remove surface starch, then dry them very thoroughly with clean towels.
  3. Toss potatoes with oil. Add cornstarch, paprika, garlic powder, half the salt, and pepper; toss until no dry patches remain.
  4. Air fry in a roomy layer for 16 to 22 minutes, shaking every 6 to 7 minutes. Cook in batches if the basket is crowded.
  5. Stop when the edges are deeply golden and a knife slides easily into the centers. Season with remaining salt and parsley.
  6. Mix yogurt with lemon and a little parsley for dipping. Refrigerate leftovers within 2 hours and reheat until hot and crisp.
