- 8 oz short pasta penne, rotini, or shells
- 1 lb boneless chicken breast thinly sliced
- 2 cups spinach loosely packed
- 3 cloves garlic minced
- 1 tbsp olive oil for cooking
- 1/2 cup Greek yogurt plain; use off heat to avoid curdling
- 1/3 cup parmesan finely grated
- 1/2 cup reserved pasta water use as needed
- 1 tbsp lemon juice optional brightness

Steps
- Boil pasta in salted water until just tender. Reserve 1/2 cup pasta water before draining.
- Season chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook chicken until browned and cooked through.
- Lower heat and add garlic. Stir for about 30 seconds until fragrant.
- Add spinach and cook just until wilted.
- Turn heat to low. Add pasta, parmesan, and a splash of reserved pasta water.
- Remove from heat and stir in Greek yogurt until creamy. Add more pasta water as needed.
- Finish with lemon juice and black pepper, then taste before serving.
