Ingredients

  • 8 oz short pasta penne, rotini, or shells
  • 1 lb boneless chicken breast thinly sliced
  • 2 cups spinach loosely packed
  • 3 cloves garlic minced
  • 1 tbsp olive oil for cooking
  • 1/2 cup Greek yogurt plain; use off heat to avoid curdling
  • 1/3 cup parmesan finely grated
  • 1/2 cup reserved pasta water use as needed
  • 1 tbsp lemon juice optional brightness
  • to taste salt and black pepper

Steps

  1. Boil pasta in salted water until just tender. Reserve 1/2 cup pasta water before draining.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat and cook chicken until browned and cooked through.
  4. Lower heat and add garlic. Stir for about 30 seconds until fragrant.
  5. Add spinach and cook just until wilted.
  6. Turn heat to low. Add pasta, parmesan, and a splash of reserved pasta water.
  7. Remove from heat and stir in Greek yogurt until creamy. Add more pasta water as needed.
  8. Finish with lemon juice and black pepper, then taste before serving.
